Odako
Odako is a very small area outside of Shantawene Village, tucked into the Sidama highlands and it has a very unique expression of terroir. The green (unroasted) coffee already smells like cherry and cacao. This year, we asked Berhanu Woldegiorgis, site manager for Daye Bensa’s Gatta Farm, to pick a 3 week window when the cherries were coming in at their peak, and the weather looked perfect. Then, to select our lot, and dry them slowly in the shade at Gatta Farm.
The result is exquisite. The coffee smells of deep cherry schnapps and cacao powder, but the body is wine-like with supple tannins and incredible length
